Watermelon Sherbet Smoothies
I found this recipe in a magazine, then lost it. I searched online for years. One time Family Fun ran a picture of
the recipe, but didn’t run the recipe.
I even emailed the editor—still no luck. I finally found it again, but can’t remember where!! Typical me!
3 cups frozen watermelon cubes
1 cup lime sherbet
4 tsp lime juice
½ cup miniature chocolate chips
Combine watermelon, sherbet, lime juice in a blender
and blend until smooth. Pour into
frosted glasses and top with a miniature chips to resemble watermelon
seeds. Serves 4.
Rosemary Watermelon Lemonade
Steven had this in the airport in LA on his way to New York. He found a copycat recipe and it’s
become a family favorite. We like
to use frozen watermelon for the frozen version (skip the ice).
2 cups water
¾ cup sugar
1 sprig rosemary, leaves stripped and chopped
2 cups lemon juice
12 cups cubed seeded watermelon
8 cups ice cubes
Bring the water and sugar to a boil in a small
saucepan over high heat. Stir in
the rosemary and set aside to steep for 1 hour. Place half the lemon juice and half the watermelon into a
blender. Strain half the rosemary
syrup through a mesh strainer into the blender. Puree until smooth.
Repeat with other half of ingredients. Serve over ice cubes if not making frozen version.
Lemonade from Real Lemons
We love freezing lemon juice in the winter and having homemade lemonade all summer. I usually squeeze 1 grapefruit into a quart jar and fill it the rest of the way with lemon juice.
2 cups sugar
2 cups water
1 quart (4 cups) fresh squeezed lemon juice (see note above)
Boil sugar and water. Add lemon juice. Add enough water to make almost 1 gallon. Add water and sugar to taste.
